    Fresh Coconut Pineapple Margarita

    This tropical and sweet coconut pineapple margarita will transport you right to vacation. This cocktail is loaded with fresh pineapple juice, coconut cream, fresh lime juice, and good tequila!

    This is the perfect drink for you if you want a fresh, fruity, and coconut-y cocktail! All the sweetness comes from the cold-pressed pineapple juice, coconut cream, and just a hint of agave, no overly sweet margaritas here! It's then garnished with toasted coconut for more tropical flare!

    Why you will love this recipe:

    I love margaritas, but I often find that they are way too sweet. I much prefer a margarita that tastes mostly of fresh fruit and has just enough sweetener to complement the flavor of the fruit in the margarita. 

    So in this recipe, there is no sweet orange liqueur, just a hint of agave and coconut to sweeten it. This leaves the drink tasting mostly of fresh coconut and pineapple.

    Key ingredients:

    Blanco Tequila: the trick to a good margarita is good ingredients, so use good tequila- my favorites are Casamigos and Espolòn's Blanco. But here is a great list if you want more recommendations. Bonus points if you get one with notes of citrus. 

    Fresh Cold-Pressed Pineapple Juice: you can use any type of pineapple juice you like, but I find that fresh cold-pressed tastes best! Just look for fresh pineapple juice with no added sweeteners.

    Simple Syrup or Agave Nectar: this cocktail has just a bit of sweetener to perfectly balance and complement the pineapple juice. You can use agave, simple syrup, or even honey, whatever you have on hand. 

    Lime Juice: no margarita is complete without lime juice!

    Coconut Cream: coconut cream is thicker than coconut milk because it has less water, making it have a higher concentration of coconut flavor. 

    Shaved Coconut: quickly toast the coconut in a saucepan for a sweet and delicious rim for this margarita!

    How to make this recipe:

    This is so easy to make, and if you are in a rush, feel free to skip the toasted coconut, but it adds a wonderful effect. 

    1. Start by toasting the shaved coconut by heating it in a saucepan on medium heat until lightly browned. Rim your margarita glass in agave, and then dip it into the toasted coconut.
    2. Then add the tequila, lime juice, agave, and pineapple juice to a cocktail shaker filled with ice.  
    3. Strain the coconut cream to ensure there are no lumps. 
    4. And the coconut cream to the shaker and shake for 10 seconds. Add ice, followed by pineapple juice, lime juice, and tequila.
    5. Shake for 10 seconds, then strain over ice into the coconut rimmed glass.

    Tips and tricks for success:

    • If your shaved shards are too long, simply crush them with your hands before toasting.
    • Use agave to rim your glass to ensure that the coconut sticks. 
    • If you want even more spice, you can rim the edge of the glass with tajín!
    • Really shake your margarita in the cocktail shaker to get a nice foam top.
    • Garnish with pineapple and lime slices.

    FAQ:

    Can I make this margarita into a pitcher?

    Yes! Just use the tool in the recipe card and multiply the recipe by how many margaritas you want to fill in your pitcher. Add it all the pitcher and stir!
