This pumpkin chai manhattan combines the best flavors and spices of fall. Its bourbon, baileys, and Angostura bitters are mixed with pumpkin, brown sugar, and chai tea syrup. It's full of pumpkin and chai flavor and tastes just like Fall in a martini glass!

I love any type of Bourbon cocktail and amanhattan is really just a bourbon martini. Manhattans are such a great cocktail, they are essentially a bourbon martini, and I think bourbon is so much more flavorful than vodka or gin. This bourbon espresso martini and this pumpkin spice espresso martini are both technically more manhattans than martinis and they are both some of my favorite cocktails.

Why you will love this recipe?

    1. It has the best fall flavors! The pumpkin chai syrup is full of pumpkin and spice flavor and mixes so well with the bourbon.
    2. Perfect fall martini for bourbon lovers.
    3. It's so easy, and the syrup is perfect as a coffee sweetener as well.

    Key Ingredients:

Ingredients for the Manhattan on a orange marble table.

Pumpkin: canned pumpkin is used to make the pinkok syrup. Make sure to use real pumpkin and not pumpkin pie mix or filling.
Chai Tea: this delicious tea is what spices and flavors the pumpkin.
Brown sugar: brown sugar is sugar mixed with molasses, and the deep molasses flavor goes down well with the pumpkin and chai.
Bourbon: Bourbon is the key ingredient in any Manhattan, so using the best one that goes well with the espresso and brown sugar is key. A sweet but well-balanced bourbon is my favorite. I used Woodford Reserve for this version.
Baileys: baileys is an irish cream liqueur with a whiskey base that blends perfectly with the bourbon and pumpkin.
Angostura bitters: these add a touch more spice and flavor to the cocktail

    See recipe card for quantities.

    How to make this recipe:

The syrup ingredients in a clear glass pot on an orange marble table.
    1. Step 1: make the syrup by combining 1 cup pumpkin, 1 cup brown sugar, 1 cup water, and 3 chai tea bags in a small sauce pan. Cook until all the sugar has melted and the tea has been infused into the syrup. Let cool.
All the ingredients for the cocktail in a glass mixing glass.
    1. Step 2: Add ice to a mixing glass and top with 1 ounce of the pumpkin syrup, ½ ounce baileys, 2 ounces bourbon, and 2 dashes of Angostura bitters.
The stirred cocktail in a glass mixing glass.
    1. Step 3: Stir and pour into a martini or coupe glass.

    1. Step 4: garnish with star anise and edible glitter (optional).

    Tips!

Let the syrup cool before using and add the Baileys before the bourbon to prevent curdeling.

Suggested Barware: Use a jigger to measure your bourbon and syrup accurately. Use a reliable cocktail shaker to mix the cocktail.

    About Pate

Hi! I'm Pate, the blogger, recipe developer, and photographer behind The G&M Kitchen!

Raised in the heart of Kentucky, I come from a long line of passionate cooks and bakers. The kitchen was always the heart of our home, where we transformed vegetables into delightful dishes and crafted pies and cakes that emerged from the oven. This tradition of coming together through food and cooking inspired the name of my blog, The G&M Kitchen – 'G' for my father's family, the Giltners, and 'M' for my mother's family, the Millers.

I also believe if a recipe is missing something, it's probably bourbon.
