    Strawberry and White Chocolate Cornflake Cookies

    Strawberry and white chocolate is one of my favorite snack combinations. I also love a freeze dried strawberry, and have always thought they would be amazing in a cookie. Sooooo I put them in a cookie also loaded with white chocolate and Frosted Flakes.

    The result is a super tasty and fruity cookie that's perfect for afternoon snacking!

    Strawberry and White Chocolate Cornflake Cookies

    Ingredients

    Scale
    1. 1 ¼ cups butter
    2. 1 ⅓ cups brown sugar
    3. 1 cup granulated sugar
    4. 2 eggs
    5. 2 teaspoons vanilla extract 
    6. ¼ teaspoon almond extract
    7. ½ teaspoon ground cardamom 
    8. 1 ¼ teaspoons baking soda 
    9. 1 ½ teaspoons baking powder 
    10. 1 ½ salt
    11. 3 ½ cups AP flour
    12. 12 ounces white chocolate chips 
    13. 1.2 ounces freeze-dried strawberries 
    14. 1  ½ cups frosted flakes


    Instructions

    1. Cream together the butter and sugars until light and fluffy
    2. Add in the eggs 1 at a time, mixing after each addition 
    3. Add the extracts, cardamom, baking soda, baking powder, and salt and mix
    4. Add the flour 1 cup at a time and mix until just combined
    5. Fold in the white chocolate, strawberries, and frosted flakes 
    6. Cover and refrigerate overnight or a least 1 hour
    7. Scoop and roll into golf ball-sized balls and place on parchment-lined baking sheets and bake for 10-12 minutes at 350 degrees.
