Strawberry and white chocolate is one of my favorite snack combinations. I also love a freeze dried strawberry, and have always thought they would be amazing in a cookie. Sooooo I put them in a cookie also loaded with white chocolate and Frosted Flakes.
The result is a super tasty and fruity cookie that's perfect for afternoon snacking!

Ingredients

- 1 ¼ cups butter
- 1 ⅓ cups brown sugar
- 1 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- ¼ teaspoon almond extract
- ½ teaspoon ground cardamom
- 1 ¼ teaspoons baking soda
- 1 ½ teaspoons baking powder
- 1 ½ salt
- 3 ½ cups AP flour
- 12 ounces white chocolate chips
- 1.2 ounces freeze-dried strawberries
- 1 ½ cups frosted flakes
Instructions
- Cream together the butter and sugars until light and fluffy
- Add in the eggs 1 at a time, mixing after each addition
- Add the extracts, cardamom, baking soda, baking powder, and salt and mix
- Add the flour 1 cup at a time and mix until just combined
- Fold in the white chocolate, strawberries, and frosted flakes
- Cover and refrigerate overnight or a least 1 hour
- Scoop and roll into golf ball-sized balls and place on parchment-lined baking sheets and bake for 10-12 minutes at 350 degrees.
