Who doesn't love a sweet gooey s'more around a campfire in the summer or fall? Well, this s'more old fashioned takes all those flavors and turns them into a delicious bourbon cocktail! It starts with a graham cracker-flavored simple syrup, then it is a good sweet bourbon, Angostura, and chocolate bitters, and finished with a toasted marshmallow.

A small glass with the bourbon cocktail garnished with toasted marshmallows on a brown table.

Making a delicious old fashioned is an art form and takes just the right balance of ingredients to get it right; just check out my  How to make a perfect Old Fashioned post or this banana bread old fashioned.

Why you will love this recipe:

    1. It's all the flavors of s'more in a bourbon-based cocktail! This is a sweet old fashioned with layers of subtle flavors.
    2. The perfect complement of flavors for bourbon lovers! Honey, cinnamon, brown sugar, and chocolate are a perfect match for the flavors in most bourbons.
    3. It's so easy! This is so easy to make and can all be assembled in one glass.

    Key Ingredients:

All the ingredients for the cocktail on a splattered brown table.

Bourbon: Bourbon is the key ingredient in any old-fashioned, so using the best one that goes well with the honey, brown sugar, and chocolate is key. A sweet but well-balanced bourbon our favorite.

What bourbon is best for this cocktail:

Woodford Reserve Double Oaked is my favorite bourbon for this drink because it's so smooth, well-rounded, and sweet and has notes of vanilla, toasted marshmallows, and chocolate.

Graham Craker Syrup: This is an easy and delicious syrup made with honey, brown sugar, cinnamon, and vanilla.

Bitters: both angostura and chocolate bitters are used to give the cocktail a bit of spice and chocolate notes.

Toasted Marshmello: A toasted marshmallow is a show-stopping garnish and gives the cocktail a bit of smokiness.

    See recipe card for quantities.

    How to make this recipe:

The syrup in a glass sauce pan.
    1. Step 1: Start by making the syrup by combining ¼ cup honey, ¾ cup brown sugar, 3 cinnamon sticks, and 1 cup water in a saucepan. Heat until the sugar has melted, then remove from heat and add 1 teaspoon of vanilla.
A small glass with a large ice cube and 1 ½ ounce bourbon.
    1. Step 2: Add a large ice cube to a rocks glass, then top with 1 ½ ounces of bourbon (you can also make this in a mixing glass then pour into a rocks glass with ice).
The finished cocktail being stirred with a cocktail stirrer.
    1. Step 3: Top with ¾ ounces of the syrup, then 1 dash Angostura bitters and 2 dashes chocolate bitters. Stir.
Toasted marshmallows on a cocktail stick.
    1. Step 4: Toast 2 marshmallows and garnish the drink.

    Tips for success:

Suggested Barware: Use a jigger to measure your bourbon and syrup accurately. Also, using a cocktail stirrer is beneficial because it fits so well around the ice.

Ice: Use a large ice cube because it melts slower and is less likely to dilute the drink.

Store the leftover syrup in the fridge for up to two weeks.

Toast the marshmallows on a heat-safe stick with a kitchen torch on medium-low for quick and easy toasted marshmallows.

This recipe is amazing. We’ve been making it over and over again. The syrup for the cocktail is also great in lattes!

    About Pate

Hi! I'm Pate, the blogger, recipe developer, and photographer behind The G&M Kitchen!

Raised in the heart of Kentucky, I come from a long line of passionate cooks and bakers. The kitchen was always the heart of our home, where we transformed vegetables into delightful dishes and crafted pies and cakes that emerged from the oven. This tradition of coming together through food and cooking inspired the name of my blog, The G&M Kitchen – 'G' for my father's family, the Giltners, and 'M' for my mother's family, the Millers.

I also believe if a recipe is missing something, it's probably bourbon.
