    Light and Airy Grapefruit Aperol Spritz

    This grapefruit Aperol spritz has quickly become my favorite spritz! It combines grapefruit liqueur, Aperol, prosecco, a little sparkling water, and rosemary to create a light, airy, and layered cocktail that is utterly delightful. It's not overly sweet; it's lightly fruity and has lovely herbal notes from the rosemary.

    This is the perfect cocktail for spring; it's bright, light, and not overly sweet! Spring cocktails should be delightfully fresh, like the best mint julep recipe, which is loaded with fresh mint. It's also the perfect cocktail or spritz for Easter! Its light pink color and fresh flavor make it the perfect cocktail for Easter brunch, especially when you serve it with these carrot cake cookies with cream cheese frosting and candied pecans!

    Key Ingredients:

    • Giffard Grapefruit Liqueur: Giffard is my favorite brand of liqueur, and the grapefruit one is particularly delicious! It's also the winning ingredient in the best fresh grapefruit margarita!
    • Aperol: this recipe calls for equal parts grapefruit liqueur and Aperol, so it's not overly sweet or bitter but wonderfully balanced. 
    • Prosecco: use your favorite prosecco or substitute for Champagne or Cava!
    • Rhubarb Bitters (optional): rhubarb is one of the many flavors in Aperol, and these bitters build on that profile. 
    • Rosemary: Rosemary and grapefruit are such a great combination, and the herbal flavor adds an interesting depth to the spritz!

    How to make this cocktail:

    Ice sitting in a large wine glass.

    Step 1: Add ice to a large wine glass.

    The grapefruit liqueur and aperol have been added to the wine glass.

    Step 2: Add in ½ ounce grapefruit liqueur and ½ ounce Aperol.

    Prosecco is being poured into the wine glass.

    Step 3: Top with 4-5 ounces of prosecco. 

    Prosecco and bitters have been added to the glass and it is being stirred.

    Step 4: Add 2 dashes of rhubarb bitters (optional), stir, and garnish with a grapefruit wedge and a rosemary sprig. 

    Expert Tips:

    Suggested Barware: Use a jigger to measure your grapefruit liqueur and Aperol accurately. Also, using a cocktail stirrer is beneficial because it fits so well around the ice.

    Ice: I love to use small cubed ice or crushed ice over banana ice because it fits in the wine glass better than banana ice. 

    Don't skip the rosemary - even though the sprig is added at the end, the light herbal falvor still comes through and gives the cocktail dept

    Description

    Ingredients

    Scale
    • ½ ounce Giffard Grapefruit Liqueur
    • ½ ounce Aperol 
    • 4-5 ounces Prosecco 
    • 1-ounce sprinkling water 
    • 2 dashes of Rhubarb Bitters (optional)
    • 1 sprig rosemary 
    • Grapefruit wedge

    Instructions

    Fill a wine glass with ice, and top with the grapefruit liqueur, Aperol, and prosecco. Top with sparkling water, bitters, and stir. Finish with a grapefruit wedge and rosemary sprig.
