    Chocolate Covered Strawberry Old Fashioned

    This chocolate covered strawberry old fashioned comes complete with homemade chocolate covered strawberries and is the perfect treat for Valentine's Day or any time of year! It combines my favorite recipe for dipping chocolate, a strawberry, brown sugar, vanilla syrup, bourbon, and chocolate bitters - and fresh strawberries!

    I love all things strawberry; it is one of my go-to flavors. I love how strawberry and bourbon come together in this Strawberry Cream Cheese Pound Cake or in this strawberry hot honey bourbon smash.

    Ingredients

    • Semi-sweet chocolate chips: I typically go for the mini version because I think they melt a little faster.
    • Coconut Oil: a couple of tablespoons is added to the chocolate to create a really smooth and shiny dipping sauce that hardens beautifully.
    • Strawberries: we will be using strawberries in our syrup and for making chocolate-covered strawberries, so fresh is best, but you can use frozen for the syrup.
    • Brown Sugar and Vanilla: these are going into our syrup with our strawberries. The brown sugar and vanilla add deeper sweet and caramel notes that mix so well with the bourbon. 
    • Bourbon: I went with Woodford Reserve Double Oaked because it has pretty heavy chocolate notes, and it was wonderful.
    • Bitters: both chocolate and orange bitters round out the cocktail.

    How to make this recipe:

    Mini semi-sweet chocolate chips and coconut oil in a green and white bowl.
    1. Step 1: Start by making your dipping chocolate. Combine 1 ½ cups of semi-sweet chocolate chips and 2 tablespoons of coconut oil in a microwave-safe bowl and heat in the microwave for 15-second increments, stirring in-between, until the chocolate is melted.

    1. Step 2: Dip your strawberries and rimm your glasses in the melted chocolate, set them on wax or parchment paper, and let them dry.

    1. Step 3: Make your strawberry syrup by combining 1 cup water, 2 cups sliced strawberries, 1 cup brown sugar in pot and cook on medium-low until the strawberries are very soft (about 20 minutes). Then remove from heat and let cool; once cool or lukewarm, mix in 1 teaspoon of vanilla extract. Then strain.

    1. Step 4: Add a large ice cube to your rimmed glass (or add ice to a mixing glass if you prefer to mix the drink that way). Top with 2 ounces of bourbon, ½ ounce of strawberry syrup, two dashes of chocolate bitters, and 1 dash of orange bitters.

    Step 5: Stir to combine.

    Step 6: Top or serve with a chocolate-covered strawberry (optional: added shaved chocolate).

    Tips:

    Leave enough time for your chocolate to set and dry - it takes 2-3 hours for the chocolate to harden.

    The chocolate-covered strawberries are best eaten at room temperature the day of but will be kept in the refrigerator for 3 days. 

    The strawberry syrup will last in the refrigerator up to 2 weeks.

    Ingredients

    For the chocolate:

    • 1 ½ cups semi-sweet chocolate chips - I prefer the mini version
    • 2 tablespoons coconut oil

    For the Syrup:

    • 2 pound strawberries (1 for the syrup and 1 for dipping)
    • 1 cup brown sugar
    • 1 tsp vanilla

    For the cocktail:

    • 2 ounces bourbon
    • ½ -1 ounce strawberry syrup
    • 2 dashes of chocolate bitters
    • 1 dash orange bitters

    Instructions

    1. Start by making your dipping chocolate. Combine 1 ½ cups of semi-sweet chocolate chips (I prefer using the mini version) and 2 tablespoons of coconut oil in a microwave-safe bowl.
    2. Heat in the microwave for 15-second increments, stirring in between increments, until the chocolate is almost melted. Continue to stir until all the chocolate has melted.
    3. Dip your strawberries and rimm your glasses in the melted chocolate, set them on wax or parchment paper, and let them dry for 2-3 hours. 
    4. While the chocolate is setting, make your strawberry syrup.
    5.  Combine 1 cup water, 2 cups sliced strawberries, 1 cup brown sugar in pot and cook on medium-low until the strawberries are very soft (about 20 minutes). 
    6. Then remove from heat and let cool; once cool or even lukewarm, mix in 1 teaspoon of vanilla extract. Then strain. 
    7. Next, assemble the cocktail by adding a large ice cube to your rimmed glass (or add ice to a mixing glass if you prefer to mix the drink that way). Top with 2 ounces of bourbon (my recommendation is Woodford Reserve Double Oaked for this), ½ - 1 ounce of strawberry syrup (depending on how sweet you want it), two dashes of chocolate bitters, and 1 dash of orange bitters. 
    8. Stir to combine.
    9. Top or serve with a chocolate-covered strawberry.
