    Cardamom and Pear Cookies

    These cookies are delightful and I mean super duper DE - LIGHT - FUL. They are chewy little morsels that, because of the heavy helping of cardamom, make you feel like you are in Sweden at a cafe discussing your sophistacted Swedish life.

    I made them because a coworker was talking about her upcoming trip to Sweden and I immediately started craving Cardamom Buns, and then it hit me what if there was a cookie version of a cardamom bun. Then I got completely distracted and thought "ohhhh wouldn't that be good with pears" and then "I wonder what it would be like to throw some bourbon in there as well." Well this is what happened and it's absolutly delicious.

    Here's what you need:

    ½ cup unsalted butter

    ½ cup light brown sugar

    ⅓ cup granulated sugar

    1 large egg

    1 teaspoon vanilla extract

    ¼ teaspoon almond extract 

    2 teaspoon bourbon 

    2 teaspoon ground cardamom 

    ½ teaspoon ground cinnamon 

    ¼ teaspoon ground cloves 

    1 ¼ cup all-purpose flour

    ½ teaspoon baking soda

    ¼ teaspoon salt

    1 handful of dried pear slices

    Here's what you do:

    Preheat the oven to 350 degrees. Cream together the butter and the two sugars in with a mixer until fluffy and well mixed. Beat in the egg, both extracts, bourbon, and spices until combined. Add the flour, baking soda, and salt and mix until just combined. Refrigerate for at least 30 minutes (can be left in overnight). Slice the pear slices into small thirds, small enough so you can place them on top of the raw cookie dough before baking. Using a tablespoon scoop out cookie dough onto two baking sheets and place 2-3 pieces of the pear slices on each cookie. Bake for 13 minutes or until the sides of the cookie begin to brown.
