- 1/2 cup unsalted butter
- 1/2 cup light brown sugar
- 1/3 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 tsp almond extract
- 2 tsp bourbon
- 2 tsp ground cardamom
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1 1/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 handful of dried pear slices
Instructions
- Preheat the oven to 350 degrees.
- Cream together the butter and the two sugars in with a mixer until fluffy and well mixed.
- Beat in the egg, both extracts, bourbon, and spices until combined.
- Add the flour, baking soda, and salt and mix until just combined.
- Refrigerate for at least 30 minutes (can be left in overnight).
- Slice the pear slices into small thirds, small enough so you can place them on top of the raw cookie dough before baking.
- Using a tablespoon scoop out cookie dough onto two baking sheets and place 2-3 pieces of the pear slices on each cookie.
- Bake for 13 minutes or until the sides of the cookies begin to brown.
