Cardamom and Pear Cookies

Ingredients

  1. 1/2 cup unsalted butter
  2. 1/2 cup light brown sugar
  3. 1/3 cup granulated sugar
  4. 1 large egg
  5. 1 teaspoon vanilla extract
  6. 1/4 tsp almond extract 
  7. 2 tsp bourbon 
  8. 2 tsp ground cardamom 
  9. 1/2 tsp ground cinnamon 
  10. 1/4 tsp ground cloves 
  11. 1 1/4 cup all-purpose flour
  12. 1/2 teaspoon baking soda
  13. 1/4 teaspoon salt
  14. 1 handful of dried pear slices 

Instructions

  1. Preheat the oven to 350 degrees.
  2. Cream together the butter and the two sugars in with a mixer until fluffy and well mixed.
  3. Beat in the egg, both extracts, bourbon, and spices until combined.
  4. Add the flour, baking soda, and salt and mix until just combined.
  5. Refrigerate for at least 30 minutes (can be left in overnight).
  6. Slice the pear slices into small thirds, small enough so you can place them on top of the raw cookie dough before baking.
  7. Using a tablespoon scoop out cookie dough onto two baking sheets and place 2-3 pieces of the pear slices on each cookie.
  8. Bake for 13 minutes or until the sides of the cookies begin to brown.
