The gold rush cocktail is a delightful mix of bourbon, lemon, and honey. It's sweet and refreshing and the perfect light and citrusy cocktail for bourbon enthusiasts!

This cocktail is a bourbon twist on the bee's knees and proves that lemon and honey are the perfect companions to bourbon!

Why you will love this recipe:

This recipe is similar to a whiskey sour but replaces the simple syrup with honey. The honey gives a deeper and more earthy flavor to the drink and the lemon brightens the bourbon and the honey.

I am such a fan of lemon summer drinks, and this limoncello spritz is also a delicious choice for lemon lovers.

Ingredients for the cocktail against a brown wall.

    Key ingredients:

Bourbon- bourbon is the spirit in this cocktail and is a majority of the recipe. I like a bourbon on the sweeter side for this drink, like Four Roses Small Batch or Angels Envy. However the original was made with the spicy Old Grandad.

Lemon- lemon juice brightens the bourbon and cuts the sweetness of the honey. The combination of the three is pure alchemy and is totally delicious.

Honey - honey is the sweetener in this recipe and gives the cocktail a wonderful depth of flavor. Many Gold Rush recipes call for a honey syrup which is when honey is heated with water on a one-to-one ratio. Honey syrup mixes better with the cocktail, but the flavor isn't as strong, which I why I prefer straight honey.

    How to make this recipe:

This recipe is quick and simple! The only "trick" is to shake the cocktail enough to fully incorporate the honey; about 60 seconds does the trick.

Combine the lemon juice, bourbon, and honey in a cocktail shaker with ice and shake. Shake about 60 seconds or until all the honey has been incorporated.

Raised in the heart of Kentucky, I come from a long line of passionate cooks and bakers. The kitchen was always the heart of our home, where we transformed vegetables into delightful dishes and crafted pies and cakes that emerged from the oven. This tradition of coming together through food and cooking inspired the name of my blog, The G&M Kitchen – 'G' for my father's family, the Giltners, and 'M' for my mother's family, the Millers.

I also believe if a recipe is missing something, it's probably bourbon.
