For the Muffins:
- 2-3 ripe bananas + 2 bananas sliced to put on top of the batter
- 7 tbsp butter - melted
- 2 eggs
- 1/3 cup milk
- 1/4 cup bourbon
- 1 tsp vanilla
- 1/3 cup granulated sugar
- 1/3 cup honey
- 1 cup almond flour
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp cardamom
For the butter:
- 1 cup salted butter
- 1 tsp bourbon
- 1/4 cup honey
Instructions
- Preheat the oven to 350 degrees and line a muffin tray.
- Mash the ripe bananas with a fork in a medium mixing bowl. Leave 2 bananas to the side for the topping.
- Add in the melted butter and mix to combine. Add in the eggs and mix with a fork or a whisk until the eggs are fully incorporated. Continue mixing in the wet ingredients followed by the dry. Stir until all the flour has been incorporated.
- Pour the mixture evenly into the prepared muffin tray. Slice the remaining bananas in 1/4 inch pieces and press them in the muffin batter.
- Bake for 30-35 minutes, until the top, is nice and brown and a knife comes out clean.
For the butter:
- Let the butter come to room temp. Then with a mixer, beat the butter, honey, and bourbon together until all the honey has been incorporated into the butter.
