Banana Muffins with Bourbon and Honey Compound Butter

For the Muffins:

  1. 2-3 ripe bananas + 2 bananas sliced to put on top of the batter
  2. 7 tbsp butter - melted
  3. 2 eggs
  4. 1/3 cup milk
  5. 1/4 cup bourbon
  6. 1 tsp vanilla
  7. 1/3 cup granulated sugar
  8. 1/3 cup honey
  9. 1 cup almond flour
  10. 1 cup all-purpose flour 
  11. 1 tsp baking powder 
  12. 1/2 tsp salt
  13. 1/2 tsp baking soda 
  14. 1 tsp cinnamon 
  15. 1 tsp cardamom 

For the butter:

  1. 1 cup salted butter
  2. 1 tsp bourbon 
  3. 1/4 cup honey 

 


Instructions

  1. Preheat the oven to 350 degrees and line a muffin tray.
  2. Mash the ripe bananas with a fork in a medium mixing bowl. Leave 2 bananas to the side for the topping. 
  3. Add in the melted butter and mix to combine. Add in the eggs and mix with a fork or a whisk until the eggs are fully incorporated. Continue mixing in the wet ingredients followed by the dry. Stir until all the flour has been incorporated. 
  4. Pour the mixture evenly into the prepared muffin tray. Slice the remaining bananas in 1/4 inch pieces and press them in the muffin batter. 
  5. Bake for 30-35 minutes, until the top, is nice and brown and a knife comes out clean. 

For the butter:

  1. Let the butter come to room temp. Then with a mixer, beat the butter, honey, and bourbon together until all the honey has been incorporated into the butter.
