Start by making the pastry. Add the flour, salt, and sugar to a food processor and pulse and few times to blend everything together. Next, add in the butter, water, and bourbon; lightly pulse.
Next, make the filling by coring and slicing the apples. Then, mix the apples with lemon juice, cinnamon, allspice, and corn starch.
Boil the sugar and water together and then simmer over medium-high heat for 10-15 minutes. Remove from the heat and carefully stir in the cream and bourbon.
Roll out the dough, place one layer in a 9-inch pie pan, and pour in the apple filling. Pour all of the caramel on top of the apples.
Cut the resining crust layer into 1-inch strips and weave on top of the filling to make a lattice top.
Cover with an egg wash and coarse sugar and bake!
