This Truffle & Tomato Old Fashioned is earthy, savory, slightly sweet, and deeply complex, this cocktail uses fat-washed truffle oil bourbon and a homemade cherry tomato brown sugar syrup to take the classic old fashioned in an exciting and tomatoy new direction.

For the truffle bourbon:
- 1/4 cup truffle oil
- 1 1/2 cups bourbon
For the syrup:
- 2 cups water
- 2 cups cherry tomatoes
- 1 cup brown sugar
For the cocktail
- 2 ounces truffle bourbon
- 1 ounce tomato syrup
- 1 dash orange bitters
Instructions
- Start by making the fat-washed bourbon. Add 1/4 cup truffle oil and 1 1/2 cups bourbon to a mason jar. Seal, shake, and let sit at room temperature for 1 hour, then chill for 24 hours. After 24 hours, strain.
- Next, make the tomato syrup by combining 2 cups of cherry tomatoes, 2 cups of water, and 1 cup of brown sugar in a small pot. Cover and simmer until the tomatoes are soft and bursting. Use a spatula or spoon to press all the remaining juice out of the tomatoes. Uncover and let simmer 30 minutes more. Finally, let the mixture cool, then strain through a fine mesh strainer.
- Make the cocktail by combining 2 ounces of the truffle oil bourbon, 1 ounce of the tomato syrup, and 1 dash of orange bitters.
- Garnish with cherry tomatoes and orange.
