Description

These spiced apple cider muffins are BURSTING with fresh spiced apple cider flavor and taste just like your favorite apple cider donut! 


Ingredients

  • 1 cup apple cider
  • 1 tsp vanilla
  • 1 1/4 tsp ground cinnamon
  • 1/4 tsp ground clove
  • 1/8 ground nutmeg
  • 3/4 tsp allspice
  • 1/2 cup softened butter
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder

Cinnamon sugar topping: 

  • 1/4 cup butter
  • 1 tsp maple syrup
  • 2/3 cup sugar
  • 3 tsp cinnamon

Instructions

  1. Start by reducing the apple cider to 1/2 cup in a saucepan. Then sit aside to cool. Pre heat the oven to 425 degrees
  2. Then cream the butter and sugar until light and fluffy. Add the eggs, one at a time. Then mix in the vanilla.
  3. Next, mix in the reduced apple cider.
  4. Followed by the flour, spices, salt, and baking powder.
  5. Add the batter to a very well-greased muffin tin filling 3/4 of the way up.
  6. Bake at 425 for 10 minutes then lower to 375 and bake for 15-20 minutes more.
  7. Melt the butter with the maple syrup and sit aside. Combine the sugar and the cinnamon in a bowl.
  8. Let the muffins cool for 5 minutes, then brush with the melted butter and toss in the cinnamon sugar.
