For the shortbread:
- 2 sticks butter (8 ounces)
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 100 grams cornstarch (about 3/4 cup)
- 1/4 teaspoon salt
- 4 tablespoons bourbon
- 1/2 cup bacon crumbled into very small pieces. (about 10 slices)
- 2 tablespoons bacon grease
- 1/4 teaspoon almond extract
For the glaze:
- 1 cup powdered sugar
- 4 tablespoons bourbon
Instructions
- First bake the bacon on a foil lined baking sheet in the oven at 400 degrees for 20 minutes. Set aside to cool.
- Set the oven temperature to 325 degrees.
- Cream the butter and sugar until light and fluffy.
- In separate bowl whisk together the flour, cornstarch, and salt.
- Mix in the flour mixture to the butter and sugar a little at a time.
- Add in the bourbon, bacon, bacon grease, and almond extract.
- Line a work surface with parchment paper and put the formed dough on top. Place another sheet of parchment paper on top and roll out dough to 1/4 inch thickness.
- Using a cutter cut out rounds and place on a parchment lined baking sheet and bake for 20-25 minutes or until the sides begin to brown.
- Make the glaze by mixing the powdered sugar and bourbon in a small bowl until thoroughly combined.
