Description

The Millionaire Bacon Old Fashioned is everything you love about that iconic sweet-and-spicy bacon, smoky, rich, a little fiery, transformed into a bold, brunch-ready cocktail. It’s indulgent in the best way, but still balanced enough to sip slowly.

Ingredients

Units Scale

Bacon fat washed bourbon

  • 1/4 cup bacon fat
  • 750 ml bourbon

Millionaire Bacon

  • 10 slices of thick cut bacon
  • 1/3 cup maple syrup
  • 1/2 cup brown sugar
  • 1/4-1/2 tsp red pepper flakes

Millionaire bacon syrup

  • Remaining maple, brown sugar, and red pepper flake mixture (about 1/3 cup)
  • Equal part water (about 1/3 cup)

Cocktail:

  • 2 ounces bacon fat washed bourbon
  • 1/2 ounce millionaire bacon syrup
  • 2 dashes aromatic bitters
  • 2 dashes orange bitters

Instructions

  1. Step 1: Make the bacon fat–washed bourbon: Add about 1/4 cup bacon fat to a large sealable container. Top with 750 ml bourbon, shake, and let sit at room temperature for a few hours. Then chill or freeze for 12–24 hours until the fat solidifies. Remove the solid fat and strain the bourbon through a coffee filter or cheesecloth. Store in an airtight container in the fridge for 3 weeks to 1 month.
  2. Make the millionaire’s bacon Add 10 slices thick-cut bacon to a baking sheet and cook at 350°F for 15 minutes.
  3. While that cooks, make the glaze: 1/3 cup maple syrup, 1/2 cup brown sugar, 1/4–1/2 tsp red pepper flakes.
  4. Stir together, then lightly brush over the partially cooked bacon (don’t use it all—you’ll reserve some for syrup). Return to the oven for 10 more minutes, then remove and let cool.
  5. Next make the syrup: Take the remaining glaze (about 1/3 cup) and add equal parts water (1/3 cup). Heat over medium until the sugar is fully dissolved. Let cool.
  6. Finally make the cocktail:  In a mixing glass or directly in a rocks glass with ice, combine: 2 oz bacon fat–washed bourbon, 1/2 oz millionaire’s bacon syrup, 2 dashes aromatic bitters,2 dashes orange bitters.
  7. Stir until well chilled. Strain over a large ice cube (if mixing separately).
  8. Garnish: half a slice of millionaire’s bacon.
