Description
This chocolate covered strawberry old fashioned comes complete with homemade chocolate covered strawberries and is the perfect treat for Valentine's Day or any time of year! It combines my favorite recipe for dipping chocolate, a strawberry, brown sugar, vanilla syrup, bourbon, and chocolate bitters - and fresh strawberries!
Ingredients
For the chocolate:
- 1 1/2 cups semi-sweet chocolate chips - I prefer the mini version
- 2 tablespoons coconut oil
For the Syrup:
- 2 pound strawberries (1 for the syrup and 1 for dipping)
- 1 cup brown sugar
- 1 tsp vanilla
For the cocktail:
- 2 ounces bourbon
- 1/2 -1 ounce strawberry syrup
- 2 dashes of chocolate bitters
- 1 dash orange bitters
Instructions
- Start by making your dipping chocolate. Combine 1 1/2 cups of semi-sweet chocolate chips (I prefer using the mini version) and 2 tablespoons of coconut oil in a microwave-safe bowl.
- Heat in the microwave for 15-second increments, stirring in between increments, until the chocolate is almost melted. Continue to stir until all the chocolate has melted.
- Dip your strawberries and rimm your glasses in the melted chocolate, set them on wax or parchment paper, and let them dry for 2-3 hours.
- While the chocolate is setting, make your strawberry syrup.
- Combine 1 cup water, 2 cups sliced strawberries, 1 cup brown sugar in pot and cook on medium-low until the strawberries are very soft (about 20 minutes).
- Then remove from heat and let cool; once cool or even lukewarm, mix in 1 tsp of vanilla extract. Then strain.
- Next, assemble the cocktail by adding a large ice cube to your rimmed glass (or add ice to a mixing glass if you prefer to mix the drink that way). Top with 2 ounces of bourbon (my recommendation is Woodford Reserve Double Oaked for this), 1/2 - 1 ounce of strawberry syrup (depending on how sweet you want it), two dashes of chocolate bitters, and 1 dash of orange bitters.
- Stir to combine.
- Top or serve with a chocolate-covered strawberry.
Notes
Leave enough time for your chocolate to set and dry - it takes 2-3 hours for the chocolate to harden.
The chocolate-covered strawberries are best eaten at room temperature the day of but will be kept in the refrigerator for 3 days.
The strawberry syrup will last in the refrigerator up to 2 weeks.
