    French Onion Soup Pizza

If France and Kentucky had some wild love affair (lets be real that would be one cool affair. I'm picturing lots of dinners with VERY heavy food and some really great outfits) this would be their love child. French Onion Soup Pizza (the Kentucky bit is that the onions are cooked in bourbon, so CHEERS!)

This pizza is deliciously rich. The onions are caramelized in butter, thyme, bourbon, Worcestershire, and a wee bit of sugar. Sounds amazing right?! It is!

After the onions are all good and caramelized you roll out your pizza dough and dollop the onions on top. Then sprinkle a mixture of shredded swiss and gruyere cheese on top, bake for 15-20 minutes and BOOM!!! Pizza time!

    Ingredients

    Scale
    1. 2 tablespoons butter
    2. 2 cloves garlic
    3. 2 large sweet onions
    4. 6 fresh thyme sprigs, leaves removed
    5. 1 teaspoon sugar
    6. 1/3 cup bourbon
    7. 1 tablespoon Worcestershire sauce
    8. 1/4 teaspoon sea salt
    9. 1 pizza dough ball
    10. 1 tablespoon olive oil
    11. 1 cup of shredded swiss and gruyere cheese

    Instructions

    1. Preheat oven to 450 degrees and line a baking sheet with wax paper
    2. Take dough ball out of the fridge and allow to come to room temperature
    3. Thinly slice the onions and mash and mince the garlic
    4. In a medium high sided pan melt the butter on medium heat
    5. When the butter is foamy add the onions, garlic, thyme leaves, and saute until onions start to brown 10ish minutes
    6. Add the bourbon, sugar, Worcestershire sauce and keep cooking until onions become a deep brown and are cooked through
    7. Take the warmed dough and stretch out into a circle shape. I find it easiest to hold it up by the edges and rotate until it's reached the ideal thinness
    8. Flour the wax sheet and the bottom of the pizza dough and place on the baking sheet
    9. Brush olive oil over the dough and spread the onions over the dough
    10. Sprinkle 1/2 of the cheese over the pizza and bake for 15-20 minutes until crust is browned
    11. Take the pizza out of the oven and sprinkle the rest of the cheese over the pizza while it cools
    12. Sprinkle sea salt over pizza and eat up!
